Loaded Hummus

Ingredients:

  • 2 cups hummus (store-bought or homemade) - We love Yumi's Brand
  • 1/4 cup chopped kalamata olives (optional)
  • 1½ cups cherry tomatoes, halved (or quartered if large)
  • ½ cup sliced cucumbers (about 4 mini cucumbers)
  • 1 small red onion or shallot, cubed (about ¼ cup)
  • 1 clove garlic, minced
  • ½ teaspoon dried oregano
  • Salt and pepper, to taste
  • ¼ cup olive oil
  • 1–2 tablespoons chopped mixed herbs (parsley, mint, chives), plus extra for garnish
  • Sumac or paprika, for sprinkling
  • Toasted pine nuts (optional)
  • Lemon slices, for serving

Method:

  1. Mix the Veggies: In a bowl, combine the cherry tomatoes, cucumbers, olives, red onion (or shallot) and minced garlic. Add the dried oregano, olive oil, and chopped herbs. Season with salt and pepper, and toss until well mixed.

  2. Assemble the Platter: Spread the hummus evenly onto a serving platter, creating a smooth base.

  3. Top & Serve: Spoon the veggie mixture evenly over the hummus. Sprinkle with a dash of sumac or paprika, add toasted pine nuts if using, and garnish with extra herbs. Serve with lemon slices on the side for a zesty finish.
